Simple Sourdough English Muffins#

Makes 2 english muffins

Ingredients#

  • 1/2 cup active sourdough starter
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp avocado oil

Directions#

Step 1 - Make Dough#

Mix all ingredients until sticky and soft, slightly tacky. No need to knead.

Step 2 - Rise#

Cover the bowl and let it rise somewhere warm. You want it puffed, possibly bubbly. About one and a half hours.

Step 3 - Preheat Cast Iron#

Medium heat (slightly less than medium). Preheat for 5 minutes or so. Oil optional.

Step 4 - Shape the Dough#

Gently scrape the dough onto a floured surface. Cut into 2 pieces. Each should be a disk, about 3/4 inch tall.

Step 5 - Cook#

Place dough in the hot skillet. Cover with a lid (important — traps steam). Cook ~5 minutes, until bottom is golden and dough puffs.

Flip, cook ~4 minutes uncovered.
